The second gastronomic and cultural festival of San Agustín, Huila, sounds absolutely delicious! It's wonderful to see how Colombia, such a festive and diverse country, celebrates its culinary and cultural richness through events like this. It's marvelous to know that this festival, called "Historia y Sabor," takes place every last Friday of the month, gathering gastronomy and culture lovers in the heart of the colonial district "La Calle de La Locería." Local restaurants have the opportunity to showcase the authenticity of their dishes, based on rural knowledge and regional products, which undoubtedly promises a magical culinary experience. But the festival goes beyond food. With craft exhibitions, dance, theater, and music, it offers a comprehensive experience that enriches the soul and connects people with the traditions and roots of the region.   • Embracing Colombia's Avian Diversity: Celebrating Global Big Day 2024

    Today we are celebrating the Global Big Day. It fills us with pride at Chaska Tours Colombia to highlight this day. Colombia, home to unparalleled avian biodiversity, is the country with the highest number of bird species in the world, with an astonishing figure of 1,966 species, representing 20% of the global total according to WWF. In the history of this bird counting event, Colombia has shone, taking first place on ten occasions since its inception in 2015. Initially, this event was solely dedicated to the month of May, but in 2018 it was decided to conduct another count in October, coinciding with the migration of these species. Thus, the country has won six times in May (2017, 2018, 2019, 2020, 2022, 2023) and five times in October (2018, 2019, 2020, 2021, 2022). The Regional Coordination Group G32 of Global Big Day Colombia has proposed the strategy #Let'sGoForTheEndemics, with the aim of registering as many endemic species of Colombia as possible to better understand their conservation status. This year, participation in the Global Big Day 2024 is of special relevance with the upcoming celebration of COP16, the world's most important event on biodiversity, which will take place in Colombia. Joining this event does not require previous experience or full dedication. Even a brief 20 minutes of observation can make a difference. Furthermore, your participation will contribute to enriching data on Colombian avifauna, which is fundamental for the conservation of these species. As an additional piece of information, within the framework of Filbo 2024, the Humboldt Institute has launched the new Atlas of Colombia's Endemic Birds, an invaluable digital publication available for free download. This atlas contains detailed information, data, and distribution models of 83 endemic species, exclusive to Colombian territory.   • Popayan: Colombia's Gastronomic Destination

    Recognized for its colonial architecture, its Holy Week and its ample gastronomy, it is called “The White City” of Colombia, however it is full of color, thanks to the diversity of its typical dishes that delight locals and visitors. In addition, since 2005, UNESCO declared Popayan as the first City of Gastronomy within the Creative Cities Network.   A visit to Popayán is an invitation to taste the typical empanadas and tamales de pipián and delight in the endless flavors that more than 600 traditional cooks in the city offer to diners in their kitchens.   Doña Alicia, a peasant woman and traditional cook of Popayán, has inspired and encouraged her daughters, granddaughters and great-granddaughters to safeguard the recipes of local cuisine and promote food sovereignty in their community through permaculture. In her pipian workshop, you will learn how to prepare the delicious empanadas and tamales de pipian; a recipe that has survived for more than five generations and which was recognized as “Original and unique recipe of Tamal de Pipian” by the mayor of Popayan in the year 2021. But what is pipian, we tell you here: Pipián is a mashed red potato with a dry texture and a reddish color, a typical preparation of the Andean region.   • Day of Exchange and Collaboration: Guide & Driver Meeting

    Last Saturday, our guides, drivers, and the Chaska Tours team gathered at Club Maco for the annual training session. Our goal was to foster the constructive exchange of ideas and strengthen collaboration within the team. At Chaska Tours, we value not only outstanding services but also a close bond among employees. This meeting served to listen to the concerns of our guides while also communicating the concerns of our team to the guides. We aimed to ensure continuous improvement in collaboration. Using examples of correctly and incorrectly filled out reports, we highlighted the important role these play in accounting. We also discussed the code of conduct and service parameters for our guides and drivers to ensure we maintain and improve our high standards of quality and professionalism. A special highlight was the presentation by representatives from the Tierradentro region. They told us more about their territory and introduced their projects and proposals for harmonious and safe tourism in Tierradentro. We were warmly invited to visit their communities and learn more about their spiritual knowledge and traditional medicine. The event concluded with a social gathering featuring pizza and refreshing drinks, accompanied by an impressive football trick by our guide Milton. This time allowed us to exchange experiences, establish valuable connections, and strengthen our collaboration. We look back on an informative and pleasant afternoon and are motivated to continue these positive relationships to create unforgettable experiences for our travelers.
